Low carb broccoli soup

This low carb broccoli soup can also be called "low fat broccoli soup". Wonderful meal at any time of the year, especially when you target to lose some weight. Low carb cream of broccoli soup

Ingredients
  • 2 cups chopped broccoli , fresh or frozen
  • 2 cups water
  • Pinch of each (or 1 vegetable boullion cube):
    -salt
    -black pepper
    -powdered sage
    -dried thyme
    -garlic powder
  • 2 tablespoons quick-cooking oatmeal ( to make it gluten free, replace with chickpea flour or 2 potatoes)
  • 1/2 cup soymilk
Directions:
  1. Place all ingredients except soy milk in a medium saucepan and bring to a boil. Lower heat and simmer 5-7 minutes.
  2. Puree in blender. Stir in soy milk and serve.
Serves 2.
